Sweet and Spicy Chicken Fingers

I don't always have a lot of time or energy to make dinner every night. Sometimes, when I get home from work, cooking is the last thing I want to do. Sometimes I don't mind chopping up vegetables (it's kind of calming, no?), but I don't feel like eating dinner at 9:00 at night.

So whenever I find a recipe that looks quick and easy, I'm usually always open to trying it out (delicious and healthy are also a part of the criteria!).

I happened to be browsing Pinterest one day (because... Pinterest...) and found a recipe from Tiffany at Creme de la Crumb.

Quick and easy? Check.

Delicious? CHECK.

Healthy? ...check...? Okay, there's quite a bit of sugar in the sauce, so maybe not so much, but because the chicken is baked, and not fried, I can look past this. Pair it it with some steamed veggies or a nice, crisp salad, and you're definitely on the right track!

Tiffany made "Winger's Sticky Fingers" and they looked SO good, so I tried it out!

I've actually never heard of Winger's - I think they're more midwest/west of the states - but if all their food tastes like these chicken fingers, I'd love to have one here in Maryland!

Sweet and Spicy Chicken Fingers - 30 minutes - Serves 2

What you need:
For the chicken:
- 3-4 chicken breasts
- 1/2 cup of flour
- 2-3 eggs
- 1 cup of breadcrumbs (Anything you'd like, I used half Italian style and half plain panko)
For the sauce:
- 1 and 1/2 cups of brown sugar
- 1/3 cup of hot sauce (I used Frank's Buffalo Hot Wing Sauce, but any hot sauce you like is fine)
- 1/2 teaspoon garlic powder
- 2 tablespoons water

What to do:
1. Preheat oven to 425 degrees F and grease a baking sheet with nonstick spray.
2. Cut your chicken into strips and coat with the flour. You can do this is a big Ziplock bag to make it easier.
2. Whisk eggs and water in a bowl, and then add breadcrumbs to another bowl.
3. Dip the chicken into the egg, then coat in breadcrumbs. *For extra crunchy chicken, repeat the egg and breadcrumb steps a second time*
4. Put the chicken on the baking sheet, and bake for 20-25 minutes, until completely cooked.
5. While your chicken is in the oven, add brown sugar, hot sauce, water, and garlic powder to a small saucepan and heat over medium heat while stirring, until the brown sugar is dissolved and the mixture comes to a boil. Once it starts to boil, you can remove it from the heat.


6. After your chicken is completely cooked, add it to the sauce and gently toss to coat. Serve with blue cheese or ranch dressing if you'd like! I had mine with some extra sauce to dip it in!

I actually made this recipe a second time, but I used frozen, breaded chicken tenders instead of making my own chicken, and it was just as good! And a little quicker!
