Pizza is probably my favorite food - there are so many ways you can dress it, it's hard to get tired of!
I admit, though, as much as I love it, I don't make it as much as I could... I definitely let restaurants and pizza shops take care of that..... But every once in a while, I make my own - that way I can add the toppings I want (and as much as I want), plus it's a lot cheaper and quicker than waiting for the delivery guy.
I actually was craving a white pizza with spinach, and when I went to a couple of my local pizza shop's websites to see what toppings they offered and about how much it'd be, and I just couldn't find any place that had everything I wanted, and that wasn't going to cost me $20 for a couple of slices (seriously), so I decided to make my own.
Spinach Ricotta White Pizza

Spinach Ricotta White Pizza
Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes
What you need:
- Pizza dough or ready made crust
- 3 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 onion (red, yellow, white, whatever you choose!)
- 1 package fresh baby spinach
- 1/2 tablespoon Greek seasoning
- salt and pepper to taste
- 1 cup ricotta cheese
- 1/2 cup feta cheese
- 1/4 cup shredded mozzarella cheese
- crushed red pepper flakes (optional)
What you do:
1. Preheat oven to 450°F, and roll out dough on pizza stone or baking pan.
2. Heat olive oil in pan over medium heat, then add garlic.
3. Add sliced onions and cook until caramelized, about 10 minutes.
4. Add spinach and cook until completely wilted.
5. Add Greek seasoning, salt, and pepper to spinach and onion, and remove from heat.
6. Evenly spread out ricota over pizza crust, then top with spinach and onions (drain as much liquid out as you can - you don't want soggy pizza!).
7. Sprinkle shredded mozzarella, feta, and crushed red pepper flakes over spinach.
8. Bake 12-15 minutes, until cheese and crust are golden brown.
I'd recommend a thin crust for this pizza, mine was just a tad bit doughy in the middle, but it was still really good! I don't think I've ever met a pizza I didn't like...
