Homemade No Churn Galaxy Ice Cream

When I found out no churn ice cream was a thing, I got really excited. Really excited. Who knew such a magical thing could be so easy to make? I'm sure a lot of you knew... I've come to accept the fact that I'm usually pretty out of the loop. But it's okay! Because better late than never, right??

While I was looking at all the things I can't afford and the DIYs I don't have the patience to attempt on Pinterest, I found this recipe for homemade galaxy ice cream. Jamie from "Some of This and That" made it look SO easy, I knew I had to try it.  I'd seen a couple of flavor ideas for no churn ice cream, but the galaxy colors of this recipe had me sold (let it be known, I love space and I 100% approve of this galaxy color/pattern fad).

It was such an easy process and I only needed a few ingredients to make vanilla flavored ice cream.

Homemade No Churn Vanilla Ice Cream
Prep Time: 10 minutes
Cook Time: 6 hours
Total Time: 6 hours, 10 minutes

What you need:
- 2 cups Heavy Whipping Cream
- 8 ounces (1 cup) Sweetened Condensed Milk
- 1 teaspoon Vanilla Extract
- Food coloring (Optional, but that's what makes it so pretty! I used pink, blue, and purple.)

What you do:
1. Beat heavy whipping cream until soft peaks form - a.k.a until it just starts to firm up.
2. Fold in sweetened condensed milk and vanilla extract until well combined.
3. Separate mix equally into three smaller bowls.  Color one bowl pink, one bowl blue, and one bowl purple until you reach your desired shade.
4. Pour each bowl of colored mix into one large, freezer safe container and gently swirl the colors together.
5. Freeze until completely frozen (at least 6 hours).

I have to admit, I was a bit skeptical about how this would turn out. I felt like it'd be too rich, but it was really good! It tasted just like vanilla ice cream from the store. But it's much prettier.

I'll definitely be making more ice cream in the near future, since it's just so darn easy. You could even change up the colors for any holiday or occasion!
